PULLED CHICKEN

3 – 4 Organic Chix Breast
½ Beer
¼ cup Chicken broth
1 Tbls. Olive Oil
2 Tbls. Stubbs Barbecue Sauce (or you can use homemade)

INGREDIENTS FOR RUB

Himalayan Pink Salt
Smoked Paprika
Onion Powder
Garlic Powder
Chili Powder
Cumin

CROCKPOT RECIPE

Mix all rub ingredients together in bowl. Rub both sides of chicken breasts with rub (I use food handling gloves to rub with). Let sit for 10 minutes. Braise chicken breast in oil 5 minutes on both sides or until brown.

Place chicken and the juices of chicken in crockpot on low for 8 hours. After 8 hours remove chicken and pulled apart on cutting board. Return to crockpot and add 2 Tbls. of your best barbecue sauce (I use Stubbs). Mix well and let it remain cooking for 30 mins. Serve on toasted Ciabatta roll with shaved carrots and arugula and Dijon Mustard.
